I‘ve never been very daring when it comes to food. I don’t like to taste things that I don’t know or that don’t look good, but a while ago I did make an exception to that rule. My friend ordered a pasta called Aglio e Olio Peperoncino, which smelled absolutely amazing. I asked her if I could have a bite and I fell in love with it. Soon it became my favourite pasta. Nowadays I love it so much I actually learned how to cook it myself so I can eat it even more often. Because it’s my favourite food I decided to share the recipe. Like I said it’s a pretty easy to prepare dish. But what’s even more amazing is that you only need a few ingredients, most of which you probably already have at home. I usually make this pasta for two persons, but if you want to make it for more people you can just add more pasta (and if you prefer to do so a little more of the other ingredients too). Before I share the ingredients I do want to say that I do like mine really garlicy and pretty spicy, but if you’re not a fan of that you can tone it down by using less garlic and pepper.
- 200 grams of spaghetti
- 4 cloves of garlic (or 3 really big ones)
- 1 red pepper or chili pepper
- A handful of parsley
- 150 grams of olive oil
- Garlic oil (optional)
This pasta only takes about 10 to 15 minutes to prepare and it only requires a couple of steps. The first thing you want to do is heat a pan of water until it boils and put the pasta in it. After you’ve done that you can start with the other part of the pasta.
For this part you put the olive oil in a pan along with the garlic which you have chopped into slices, as well as the pepper which are also chopped into slices. Turn on the heat, but make sure that you don’t turn it up too high because it’s very important that the garlic doesn’t burn. I personally like to put it as low as possible so there’s no chance of burning. During this proces you have to stir the pan regularly.
When the oil starts to bubble you can turn the heat off. If the pasta is ready at this point you can put the pasta inside the pan with the oil and garlic picture. Mix the oil and garlic mixture and the pasta together and sprinkle the parsley on top of it and mix it in with the pasta as well. Then you can add in a little bit of garlic oil to really get that garlic taste everywhere, but if you don’t like that you can leave this step out.
How to make it more/less spicy
If you’re someone who really loves spicy food like I do, make sure that you add the pepper part as well as the little seeds into the mixture. The seeds are what makes the food extra spicy, so if you put a lot of them in the pasta it will become more spicy. You can also spice it up by adding 2 peppers to the pasta, that’s totally up to you.
If you want it less spicy you can just leave most of the seeds – or all of them – out of the pasta. This way the pasta will be a lot more mild.
Aside from using garlic oil you can also use cheese as an additional ingredient. At some restaurants they sprinkle a bit of cheese on top of the pasta. I’m not a big cheese lover – and lactose intolerant – so it’s not really my thing, but if you like it you can definitely add it to the pasta!
